PERSPECTIVE || Last nights celebratory dinner at one of our favorite vegan spots. Even though I am no longer vegan, veggie-based dishes will always be the shining star. I will never be one of those people who just eat to live, I love food way too much for that. The taste, experience and experimentation bring so much joy to my life.
Through years of trial and error I now know the foods that I can eat, that help lift me up and nourish my body vs. the foods that bring me down. I no longer fear food, wondering if one meal will leave me in excruciating pain for days or even months on end. I have been told that my diet is restrictive but I feel it is exactly the opposite. Instead of dwelling on what I can’t eat, I choose to celebrate and savor what I can eat.
I wound up going with the rosemary portobello mushrooms & broccoli rabe, enjoying every last bite.
